When My kids were younger, the one restaurant Hubby and I would go to regularly was Chevy's. It was loud inside so the fact that we were "those kinda people", yes the ones that had the kids running around the table, "talking" animatedly, and just plan causing a ruckus, didn't seem to stand out quite as badly. One item they served with most entrees, as an accompaniment, was this absolutely delicious Sweet Corn Pudding. My whole family was crazy for it. I mean, seriously, CRAZY! They always asked for extra! I was so happy when I found the Chevy's cookbook and this fab little recipe was in it. It was everything I remembered and my whole fam absolutely devoured the entire 9x13inch pan!
Be sure to use an instant read thermometer to check for doneness. The pudding top doesn't brown so it looks kinda uncooked visually. Btw-don't skip the water bath it keeps the pudding deliciously moist.

ReplyDeleteI don't believe it, Kathleen. For years I always ordered seconds of this dish when I went to Chevy's. I just ran across the recipe for it and the ingredients are sitting on the kitchen counter. This is a great side dish for Mexican entrees. Trust me, everyone, its delicious!!!!
