This is one of those dishes that I love beyond belief! It's nutritious, delicious, comforting and pleases everyone in the family. It's one of my favorite comfort foods and I make it more often than any other recipe I have. I make them so often that I've memorized the recipe. Sometimes when I wan't a lighter version I use light sour cream and cut out the cheese. Then I have a no guilt comfort food!

I would definitely want seconds of this. My kids love burritos, and I'm not sure why I haven't done enchiladas yet- I'm definitely keeping this recipe!

ReplyDeleteI just put mine in the oven.. but I'm wondering where the rest of the enchilada sauce goes? It says to put 1/4 cup at the bottom of the pan but the recipe calls for a 28 oz can. Do I put it on top of the burritos with the cheese and then broil for 10 mins?
