Gringo Enchiladas


This is one of those dishes that I love beyond belief!  It's nutritious, delicious, comforting and pleases everyone in the family. It's one of my favorite comfort foods and I make it more often than any other recipe I have.  I make them so often that I've memorized the recipe.  Sometimes when I wan't a lighter version I use light sour cream and cut out the cheese.  Then I have a no guilt comfort food!

  1. I would definitely want seconds of this. My kids love burritos, and I'm not sure why I haven't done enchiladas yet- I'm definitely keeping this recipe!

  12. Mexican must be on the menu this week. I just made Baked Beef Chimichangas and am a complete sucker for enchiladas.

    Wouldn't a pot luck be nice? Wow could you imagine a pot luck with all the foodie bloggers. LOL that would fill a whole state I think!

  22. I just put mine in the oven.. but I'm wondering where the rest of the enchilada sauce goes? It says to put 1/4 cup at the bottom of the pan but the recipe calls for a 28 oz can. Do I put it on top of the burritos with the cheese and then broil for 10 mins?

  23. Good question Jessica. Hoping to see an answer. Two of my teens are in the middle of making these and just asked the same question. The eldest bought three cans of enchilada sauce to get to 28 oz.
