This recipe is a wonderful way to welcome back fall. It cooks fairly quickly in the oven and perfumes the house with the delicious smell of roasting meat. The prep time literally is about 5 minutes and it uses only a few ingredients. This is one of those great recipes that even though it's super easy and quick, it tastes really fabulous. It's really healthy for you too. I like to serve the pork with roasted veggies like red potatoes and broccoli. That way the oven does all the work. I hope you try it soon.
Garlic Pork Tenderloin:
Ingredients:
2 Pork tenderloins, trimmed
1-3.15 ounce tube of garlic paste
3-4 tablespoons fresh rosemary, finely minced
salt and pepper to taste
Directions:
1. Preheat oven to 425 degrees.
2. Coat both tenderloins evenly with the entire tub of garlic paste. Sprinkle both generously with salt, pepper and the fresh rosemary.
3. Place both tenderloins on rimmed baking sheet. Place tenderloins in oven at 425 degrees for 10 minutes. Reduce oven temperature to 350 degrees. Continue to bake 20-25 minutes or until thermometer inserted into thickest part of pork registers 155-160 degrees. Loosely cover with aluminum foil for about 10 minutes. Slice and enjoy.
