Hye Rollers


 
Hye Roller Sandwiches

 I have a little confession to make. I LOVE this little rolled sandwiches. I know! I know! They are soooo fifteen minutes ago. What can I say. The are totally not chic these days but I don't care. I know you can buy them premade just about everywhere, even Costco. But make no mistake my friends. Those premade versions really don't measure up to these in the YUM category. Give them a try next time your having friends over to watch football or are going on a family picnic. They're easy to transport and one bite I think you'll be just as hooked as I am!


Ingredients:

1 Lavash

8 ounces cream cheese, softened
3 teaspoons horseradish
1 clove garlic, minced
hot sauce to taste  ( I only use a few drops cuz I'm a wimp )
1/4 teaspoon black pepper

2 cups Spinach, washed and dried
1/2 to 3/4 cup thinly sliced red onion
sliced sharp cheese
1 pound thinly sliced roast beef

 Directions:

1. Wet two clean kitchen towels and ring them out  well. Place lavash between the two towels. Let sit for about 1/2 hour. This moistens the lavash and makes it pliable and ready to stuff and roll.

2. Meanwhile, mix cream cheese, horseradish, garlic, hot sauce and black pepper.

3. Spread cream cheese mixture over the whole moistened lavash. Layer spinach, red onion, cheddar and roast beef leaving 3 inches without filling. Roll tightly. Wrap up the rolled sandwich in one of the moist kitchen towel. Refrigerate for a few hours then slice and serve.

Grilled Cumin Chicken Stuffed Pita Bread



 Hello! Hello!!! I can't believe how long it's been since I last blogged. Yikes. I've really missed my lil ol blog and connecting with all of my blogging pals! I can't wait to jump back in. How's everyone's summer been? Mine was great and went by way to fast. The weather here on the Socal coast has been totally bizarre. We have seen very little sunshine. It's been really overcast most of the time. The last few days have been beautiful and sunny. Just like it's always supposed to be here!

This grilled chicken sandwich was probably this summers favorite new recipes. I can't tell you how many times we enjoyed this. The whole family thought this one really rocked and it was easy to prepare! I adapted the recipe from the Dean and Deluca Cookbook. The chicken is marinaded in an olive oil spice paste which gives it tons of great flavor. It's served with a tahini yogurt sauce that  is the perfect accompaniment. This combo is also wonderful served over brown rice with some sauteed or roasted veggies like red onion and broccoli. It's like a Middle Eastern rice bowl. It calls for boneless chicken thighs so I use the Foster Farms boneless, skinless chicken thighs from Costco. I love how that they are portion-sized and sealed with about 5 thighs per pack  I always have them ready to go in my freezer. I hope you give this a try before the weather hits full fall and we're all thinking about soups and stews and yummy comfort foods.


Grilled Cumin Chicken Stuffed Pita Bread: adapted from the Dean and Deluca Cookbook

Ingredients:

10-12 boneless, skinless chicken thighs, cut in chunks
1/4 cup olive oil
3 tablespoons ground cumin
1 teaspoon ground coriander
salt and pepper to taste

Yogurt tahini sauce:
2 cups plain yogurt
1 tablespoon tahini sauce
1 tablespoon lemon juice
salt and pepper to taste

pita bread
chopped tomatoes
sliced red onions
flat leaf parsley



Directions:

1. Mix olive oil, cumin, coriander and garlic together to form a thick paste. Evenly coat chicken pieces with paste. Season well with salt and pepper. Marinate in the refrigerator overnight.

2. Mix together the yogurt, tahini paste, and lemon juice (make sure you get all the tahini well mixed in or you will have a lumpy sauces that isn't pleasant. I use my stick blender.). If you prefer a thinner sauce you can add water. Season to taste with salt and pepper.

3. Grill the chicken on both sides until there is no longer any pink. About 10 minutes on a hot, charcoal grill.
( you can also cook under a preheated broiler ).

4. Serve the chicken with steamed pitas, veggies and sauce. Sooo YUM!
